Triple Layer Chocolate Cake

So this is one of my older recipes.

This cake was dreamed up one late Thursday night in the middle of group therapy coaching ( good thing I’m not specialising in group therapy.. if I was thinking about cakes I’m not sure how much of how to be a group therapist went into my head).

This was one of the last recipes to make it onto my old blog… sorry if you’ve seen it before. But honestly if you are going to complain about seeing a TRIPLE LAYER CHOCOLATE CAKE twice… then you should not be reading a food blog.

For the cake layer:

1/4 cup pecans

1/4 cup almond flour

1/4 cup coconut flour

1/4 cup coconut milk

about 1/4 cup coconut oil- maybe a bit less i didn’t really measure

2 eggs

5 medjool dates

tsp baking powder


blend away… bake on 180 for about 20 minutes, or until done.


Second layer… chocolate fudge

1/2 cup melted coconut oil mixed with 1 banana and 1/4 cup cocoa powder

mash it all together to form a chocolate paste


Third layer.. chocolate mousse

1/2 cup coconut milk ( the thick cream part)

5 medjool dates

cocoa powder

BLEND until thick


Once the cake part has cooled, layer the chocolate fudge and place in the freezer to set a little. Because it is made of coconut oil it will firm up. Once it is firm layer your mousse… and EAT.
I actually kept the whole thing in the freezer and the mousse part stayed nice and moussey..
