Oven Roasted Stuffed Tomato+ Balsamic Reduction

This was breakfast šŸ™‚

Ok so it was a Saturday morning breakfast and I had all the time in the world… probably not ideal on a rushed weekday.

But this would make a fabulous dinner as well šŸ™‚


Slice the top of the tomato and spoon out the flesh.

Mix the flesh with whatever ground meat you like- I used turkey.

Add in black olives, parsley, onion, homemade beef or chicken stock, salt and pepper

Put the mixture back into the tomato and cover with the tomato lid, bake at 180 until meat is cooked and the tomato is roasted.

Drizzle the top with balsamic vinegar reduction.

You make the reduction by boiling balsamic vinegar.. a lot. maybe half a cup.. until it boils down to a sticky goo.
